Punjabi Shahi Paneer.

Shahi Paneer is a vegetarian Indian curry recipe in which paneer is cooked in a  thick gravy of cream, tomatoes and a few Indian spices.

Originating with the creamy delicacies of Mughlai cuisine (hence the term “shahi“, in reference to the royal title of Shehanshah in Mughal India), this dish is prepared by emulsifying tomatoes, onions, ground cashews, clarified butter and cream into a curry, with the addition of paneer cubes and a variety of spices.

It is mainly eaten with traditional Indian flat-breads like roti or naan, laccha paratha and rice.

 

In the pan:-

Ingredients:

  • Salted butter 10 gram
  • Cottage cheese cubes 150 gram
  • Chopped green capsicum ½ nos.
  • Chopped red capsicum ½ nos.
  • Chopped onion ½ nos.
  • Black pepper powder 1 tbsp
  • Salt ½ tbsp

 

For curry:-

Ingredients:

  • Clarified butter (ghee) 2 tbsp
  • Refined sunflower oil 2 tbsp
  • Onion paste 1 cup
  • Garlic paste 1 tbsp
  • Finely chopped ginger 1 tbsp
  • Chopped green chilli 1 tbsp
  • Tomato puree 2 cups
  • Salt 1-½ tbsp
  • Red chilli powder 1 tbsp
  • Carom seed (ajwain) 1 tbsp
  • Shahi paneer masala 1 tbsp
  • Cashew paste 3 tbsp
  • Fenugreek leaves (kasturi methi) 1 tbsp
  • Water 100 ml
  • Fresh cream ½ cup
