Biryani comes from the Persian word “Biryani” which means to fry. Traditionally biryani was made with meat and it was shallow fried in oil & then rice was added.  From Lucknow to Hyderabad, the preparation of biryani differs a lot. The Awadhi Biryani comes straight from the land of nawabs and has its heart filled with Lucknowi flavors.

This is one of the ideal dishes for special occasions and can be savored with friends and family.

This biryani goes best with raita or a korma or shorba gravy. 

You can also garnish this biryani with mint leaves.

For Rice:-

Ingredients:

  • Basmati rice 400 gram
  • 2 glass of water 
  • Crushed cardamom 2 nos.
  • Cinnamon stick 1 tbsp
  • Cloves 4-5 nos.
  • Black pepper 5-6 nos.
  • Cumin seeds ½ tbsp
  • Clarified butter 2 tbsp
  • Salt 1 tbsp

For gravy:

Ingredients:

  • Refined sunflower oil 2 tbsp
  • Clarified butter 1 tbsp
  • Chopped onion 1 cup
  • Cumin seed 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Grated ginger 1 tbsp
  • Chopped green chilli 1 tbsp
  • Tomato puree 2 cups
  • Salt 1 tbsp
  • Red chilli powder 1 tbsp
  • Turmeric powder ½ tbsp
  • Carom seed (ajwain) ½ tbsp
  • Shahi biryani masala ½ tbsp
  • Chopped french beans 50 gram
  • Chopped baby corn 50 gram
  • Chopped cauliflower 50 gram
  • Chopped carrot 50 gram
  • Green peas 50 gram
  • Water 100 ml
  • Cottage cheese cubes 100 gram

For garnishing:-

  • Fried onions – handful
  • Chopped coriander – handful
